Saulo Ribeiro demonstrates how to attack from the mount position. Secure a collar grip with your thumb in. Instead of going for the collar choke from the direct mount position (which opens yourself up for getting bumped off), move into a quasi-S-mount position by placing your knee near your opponent's ear. Whereas the s-mount angles your other leg into an s position, Saulo instead keeps that leg back in a "technical mount" position. From here you either choke or armbar (juji gatame), depending on what your opponent gives you.
